Okay, this was an experiment for the evening. Seems to have turned out pretty well, so I'll share (that, and I want to document it in case I decide to do it again!).

No frosting this time, I'm seeing all kinds of frosting recipes out there that use cream cheese as the base. Perhaps if I can use fat-free cream cheese?

Anyhoo:

3 scoops of "All The Whey" (I have vanilla 20/30)
1 cup water
2 cups Splenda (could probably use another sweetener if you prefer)
1/2 cup Egg Beaters
1 Tbsp Olive Oil
2 cups oatmeal (run thoroughly through food processor for flour)
1 tbsp Smucker's Oil and Shortening Replacement
1/3 cup cocoa powder
1 tsp vanilla extract

Mix very well, I poured it into a 9x9 cake pan (use non-stick spray!), and baked at 400 degrees for 20 mins. If you used the non-stick spray, you should be able to just turn over the dish and the cake will fall out. Talk about easy cleanup! :)

Here's the numbers. It looks like 9 servings if you go with 3x3 squares. Here's the numbers for the whole cake, in case you binge (note: don't binge!):

Calories: 1631
Fat: 28.5g
Carbohydrates: 108g
Protein: 89g

Per Serving (presuming 3x3 square):
Calories: 181
Fat: 3.2g
Carbohydrates: 12g
Protein: 10g

Not bad for a little experimentation. :D

This stuff is perfect with a small glass of skim milk, that is it is just *slightly* dry, and I do mean slightly. Next time around I'll try using a little more water, say 1 1/4 cups instead of 1 cup. Or maybe some milk?

Either way, I'm please with the way it turned out. Next time around I'll make frosting too.

Applesauce, mashed banana, or prune puree would improve the dryness and texture, but it would add some calories as compared to water. Some cottage cheese might be good too.

I tried these yesterday but the result wasn't too spectacular. The cake was a bit hard and chewy.

The reasons are my own follies, as listed:
1. I don't eat eggs and had to do with oil and milk to do the rest.
2. Over-baking: I went to 25 minutes due to a TV show :)

anyways, I could eat it (if its healthy, its fine) but my wife didn't touch it. If I tweak anything, and if it works, I shall post here.

I'm going to give it another go this evening. Adding a banana this time to help with moisture, and probably add just a touch more water. We'll see how it goes! :)

(I just noticed, I left off 1 tsp of baking powder. Ooops!)

MUCH better. Caveat - I goofed and put it into a loaf tin instead of a baking dish. As a result, I had bread pudding instead of cake. :)

Doesn't matter, still turned out pretty good. Maybe I'll get it right the third time? :)

So 1 1/4 cups water, and 1 ripe banana.

Seems really cool! :drool: I'm gonna try it this weekend and post results
