If you grill your chicken and then keep it in the fridge, the next day it is already hard to swallow.
What I do is use this tupperware casserole. It's made of a light material you can use in the microwave and works real fine. Actually it is meant to be used in the microwave only. My wife bought this one in Spain for about 60 Euros. It is worthed getting one. You can buy one in the US a lot cheaper;

It wont grill the chicken, but will be more like made in the oven and you can reheat the next day and will still be tender.
What I do is I put the chicken pieces inside the casserole, put some thyme or whatever herbs you like, and what we call sweet red pepper and squeeze half lemon over it, then put in the microwave for 10 minutes.

After that you open the casserole, turn the pieces, and squeeze the other half lemon over the chicken, then put it in the microwave for 10 more minutes.

And this is what you get at the end, a very tasty chicken that will not taste like sandpaper the next day.
