Since it doesn't list poly/mono, am I assuming it's part of the total fat content?

Yes. Great product, by the way, I love it. You'll see some debates over palm oil but my research suggests it has more positive than negative benefits when it's not spoiled.
Also, as consumers, we're always shorted on five key ingredients that should be mandatory on the label:
1. Potassium - the government has decided that excess sodium is bad and required this, but potassium is also important to track and almost no labels have this except some health savvy manufacturers
2. Mono fats - same with sodium except here trans and saturated fats are considered evil so the healthier fats aren't broken out
3. Poly fats - see 2
4. Omega content (3,6,etc) - see 2 & 3, would probably not be accurate anyway due to volatility of omega-3
5. Saturated fat type (i.e. now we get trans fats because they were labeled evil, but we don't get to see stearic acid versus other forms, and like unsaturated fats, the different varieties of saturated fats have different impacts)
Really, the approach to nutrition labels is similar to the approach for RDA. Instead of recommending an optimal amount for health, RDA focuses on the minimum amount for survival. Likewise, food labels are designed to highlight what the government considers "evil" like saturated and trans fats, but are allowed to neglect those others factors that are important for health (i.e. unsaturated fat breakout, potassium, and any of the vitamins and minerals that are listed beyond the required 4 of Vitamin A, Vitamin C, Calcium, and Iron)

Peanut butter taste all the same to me, natural or not. I just go with natural since it's natural.
