Anybody have any recipes for NONFAT cottage cheese? NONFAT cottage cheese tastes like... to me at least, NOTHING. I don't mind it, but I wouldn't mind adding some taste to it. I add some honey sometimes, but the times I want to eat it without too much carbs, I'm left with no choice but to eat it plain.

I just add splenda. A lot of people like to add pepper to it but I have yet to try that. :eat:

I am a pepper person. I think it tastes great that way. I haven't had regular cottage cheese in so long I'll bet it would taste bad to me if I had it.

splenda, cinnamon, natural PB, Nitrean. Maybe some vanilla.

Sounds weird, but I've actually grown very fond of the combo.

I also make smoothies out of CC all the time before bed. Similar ingredients to the above work, or blend in frozen fruits and 0 cal syrups of various flavors (caramel, white or regular chocolate, vanilla, etc). If I'm using fruit, it's normally a night after a workout, or it's in the AM when I'm rushed for time and don't have eggs prepared.

I tend to like sweet cottage cheese concoctions, but I can eat it straight if I want. Some brands are better in low or no fat CC, though. Here in Nashville we've got a local premium dairy called Purity that has the best stuff I've tried.

Try adding a few TBSP of natural peanut butter and then microwaving it for a minute or so until it's melted. Stir it up well when it's done and it tastes awesome.

Sweet stuff is made with ricotta (including cheesecake), why not CC? One has the whey protein, the other the casein.

Yeah, I've done almonds. I like it that way.

I tried the pepper with CC today... eh, wasn't bad or that good. Probably won't be doing it though. Thanks anyways.

For those of you who don't dig the sweet recipes, try the lowfat cottage cheese with "no salt added." It tastes sweet to start with and quite honestly non fat cottage cheese is loaded with salt. I haven't had regular cottage cheese in about two years. I roll like this:
1/2 cup no salt added cc
2 tablespoons of natty pb
1 packet of splenda
Of course with a serving of greens with it on the side. :tu:

I can't believe you guys put peanut butter in cottage cheese...

I remember in a thread a while back I asked about this, and you guys advised that. I tried it one time and it was NASTY. Seriously, I'd rather just eat them both plain, but separate.

I have never been a fan of sweet cottage cheese. I usually mix my CC with salsa and eat it with some high fibre crackers, or I'll make up a cup of whole wheat pasta, with a cup of pasta sauce and 1.5 cups of CC with a bunch of veggies. It melts very nice, and adds some great flavour to a filling meal.

I find it also goes well with an egg white omelet, also with a bunch of veggies.

The key to sweet CC recipes is to either use the "no salt" stuff or using enough sweet to cover up the salt.

I like to use half FFCC (with salt), half 2% no salt CC, then add berries, banana, cinnamon, brown "Sugar Twin", and whatever else I'm feeling like.

Tasty snack, usually.

I don't really worry about the salt content. After all, a lot of sweet stuff needs a bit of salt to set it off. For instance, ice cream.

There are obviously limits to the amount of salt, but lots of sweets have a pinch or so of salt in them.

The only reason that I do it is that the CC that I've had in these parts is excessively salty when combined with the sweet stuff and I've found the combination...unappealing. Sure, there are lots of sweet and salty things that work well together...that wasn't one of them, though.

I did the pineapple thing too, Stings. You can buy pre-measured cups of cottage cheese that come with a fruit as well. Those are great if you're on the go.

The key for me is added cinnamon and splenda :)

Blending helps, too. I used to find it strange, now I love it.

You probably feel like I did when I tried mastover's egg white/PB omelet. Some of us just don't like stuff others do :)

I eat the Great Value cottage cheese. I've added pepper, didn't like it at all. It was eh.

I've tried chocolate syrup (sugar free... made w/ splenda), it was alright. Still to sweet.

I've tried just regular CC + splenda, to sweet.

I'm going to try yogurt tomorrow. Almonds rocks too

I just bought my first container today. I bought the fat free stuff and it didn't taste nearly as bad as I thought it would. It tasted like nothing to me which isn't a bad thing for me. I'm going to try it with pineapple tonight and I don't really expect to taste anything but the pineapple.

I add Blackberry Fifty50 Spread to my cottage cheese, http://www.fifty50foods.com/spreads.html. At 10 calories per Tbspn, you can't go wrong and there is not much further preperation involved. I mix in Flax Oil or Udo's oil with this before bed.

For the people that eat it with just pepper, do you eat cold, warm, room temp? I'm trying to imagine eating pepper with something cold and I'm having a hard time picturing it.

Always cold. Warm dairy is nasty.

Pepper goes with cold just fine. If you put pepper on a sandwich with cold meats, it's just one example. Salt and pepper on slices of tomato, one more.

If you want to get really extravagant with your cottage cheese and are looking for a protein/fat meal for the evening, try this:

1/4 cup fat free quark (if you don't know what quark is, go here (http://www.wholefoodsmarket.com/products/grocery/dairyprimer.html) - you could use regular unsalted cottage cheese and blend it until it's smooth)
1/2 oz coarsely ground almonds (just use your food processor)
1 tbsp ground flax seeds
1 tbsp chocolate protein powder
1 tsp unsweetened cocoa powder
30 g natty PB
sweetener as desired (I would use Splenda, but I can't get that where I live :()

Nutritional info:

Put the quark or smooth cottage cheese in a bowl and whisk it with sweetener and some water until it reaches a relatively runny consistency. Add the PB and mix it in. Then add the dry ingredients and stir them in. In the end you should have a mixture that is somewhat more runny than regular pudding. Pour the whole thing into a small bowl and put it in the fridge for 2-3 hours. Enjoy!

Something this delicious should not be good for you, but what are you going to do? :D

P.S. You can experiment with the recipe and leave out the almonds or use less PB in order to reduce the calorie count.

i don't get the whole "sweet" cottage cheese thing either.

i LOVE cottage cheese. i usually just eat it mixed with tomatoes and pepper. it's also good on a salad with tomatoes, black beans, salsa and chicken.... kind of like a taco salad (minus the taco)

I know this is a fairly old thread, but I wanted to post this.

The other night I was experimenting around with cottage cheese. I added some mushroom sauce, some fat free smoked sheddar, and some oats, and a little milk.

The result was....awesome!!! It tastes like mac and cheese to me. It is soooo good I am gonna plan this meal into my menus fairly soon as I get it down solid.

This sounded kinda weird to me at first, but I have grown to really like it in the morning. I prepare 1/2 C Oatmeal (raw) w/ 1 C Skim Milk - nuke it for 2 minutes. Add 1/2 C FF Cottage Cheese and some Splenda. The CC gets creamy - it's quite good.

My absolute favorite- 1/2 cup fat-free cottage cheese, 4 egg whites, 1/2 cup rawoatmeal, dash of cinnamon and vanilla, 2 packets of splenda. Blend in blender and cook like a pancake. YUM-O!!!

Cheesecake Omlet

- 4 oz cottage cheese (pressed, low sodium cottage cheese works best)
- 2/3 cup egg whites
- 2 tbps natural peanut butter
- 1 tsp coconut oil (** optional)
- 3 splendas

Blend cottage cheese, egg whites and Splenda in a blender.
Warm up coconut oil on the frying pan (or use "PAM" spray). Pour the batter.
Cover and let cook till the top of the omlet looks firm. Flip over.
Take it off the stove. Let stand for 1-2 min.

Spread PB over the omlet and .... :eat:

thats what i've been mixing with my cottage cheese for years. I believe my mom gave it to me as a kid mixed in that way to trick me into eating something healthy. Tastes like dessert to me! I tried Pear butter once, but that wasnt nearly as good. Apple Butter all the way.

I have some lowfat cottage cheese mixed with blueberries and granola (of the low sugar variety) pretty much every day for a snack. Then I do the cottage cheese-pb-cinnamon-chocolate protein powder mix before bed.

i love ryvita dark rye bread spread with peanut butter and then topped of with thick layer of cottage cheese(youve got slow realing carbs health fats and tons of caesin protein) ,:drool:....could eat that all day long !!:lol:

- Natural peanut butter try to use as much of the oil as you can use.
- 1.5 times the cottage cheese
- a spalsh of milk
- spalsh of cream
- vanilla, splenda/sugar to taste (I used 3 splenda's with a dash of cane sugar)
- A dash of cinnamon.

Blend in food processor till smooth and creamy. You can use it as a Protein/healthy fat meal. A spread on bread. Heat and use as a peanut fudge topping. Easy and Delicious.
