Hi all,
I have been searching for some time for a really simple and plain oatcake recipe.
I have yet to find one but I took the plunge and threw this together tonight. It came out surprisingly well indeed. They are plain but thats what I wanted. You could add sweetener or raisins or anything else really to spice them up a bit. I used quick cooking oats and not rolled oats simple because the quick kind get sticky quicker. I guess you could use rolled oats and let them soak in the hot water for a while to soften and get a bit sticky.

Oat Cookies
3 Cups Oats
50 g Butter
1 cup Bran
3 Egg Whites
1 pinch Salt
2 cups Hot Water
120 g Protein Powder
1. Add hot water to oats and mix.
2. Add remaining ingredients and mix well.
3. Spoon onto baking sheet and bake at 180 degrees for 15 minutes or until golden brown.
Servings: 12
