Hey , I really want to get some good casein protein in my diet and cottage cheese fits the bill perfectly. I was wondering if anyone had any good cottage cheese recipes? I was thinking of using it as a cheese sauce for pastas etc. I also wouldnt mind some interesting recipes for eggs, I was allergic to them when I was younger but now seem to have grown out of that allergy. I 'd like to incorporate them into my diet.

hardboil them, slice thin, layer on top of open face tuna sandwich, cover with cheddar, melt, :eat: :tu: Just in case you haven't done it before, it takes about 8min in boiling water to thoroughly cook the egg (IIRC... and 4min for a soft-boiled egg, where the yolk is still soft)
They also go well with spinach and brown rice - fry 2-3 eggs and a few egg whites in a pan with 2tbsp olive oil on low heat - don't let them start to 'boil', or make 'cracklling' sounds, or they will stick to the pan. Once cooked (preferably with yolks runny), add to a bunch of steamed spinach (or other greens) and a cup of brown rice. If you're feeling extravagant, throw some sundried tomatoes, beef bouillon, chopped onion, and oregano into the rice cooker with the rice when you make it - comes out great!
