Okay, so this isn't anywhere near mastered yet, but I thought I'd throw it out there to see if anyone can help make it better.
Core and slice an apple or two (I used two medium = 269g when cored), place in microwaveable bowl.
Add brown sugar subtitute (I use Sugar Twin) or Splenda and cinnamon to coat.
Cover with plastic wrap, nuke for 5 minutes on high (dep. on microwave power).
Apples should come out soft with some "juice" on the bottom.
I then took about half a cup of f/f no sugar added vanilla yogurt, poured the juice into there, then added 1.5 scoops of vanilla protein powder (I used Nitrean this time) and a bit more Sugar Twin and cinnamon. Stir that up until well mixed.
Pour over apples, add some chopped walnuts (I used 15g) or pecans, enjoy.
It's not perfect as it has more yogurt than I would like (takes away from the apples) but you kinda need that much yogurt to mix the protein sufficiently. I'm sure I'll figure it out more as I continue experimenting.
503 cals, 44% carbs, 36% protein, 21% fat (yeah, that's 101%, thanks FitDay). These will naturally depend on the amount of apple, the type of yogurt, and any other variations you make.
