hi friends!

So, I have MANY holiday parties to attend and I have been asked to bring something to most of them...I want something healthy, yummy, and tasty (ie: something that I will want to eat;) .

So, tell me what is your favorite appetizer/hors d'oeuvre/recipe?? Simple is good too because I suck in the kitchen and mainly eat oatmeal, egg whites, and veggies :)

I am a huge fan of the veggie platter!! you know its healthy and it is simple. I am also a big fan of hummus, and it seems to go over well at parties. Alot of people have never had it and they love it. If they only knew they were eating healthy... Here is a website to helpyou out, lots of easy things.

Brunswick (no idea if I spelled that right or not) or another type of stew. If you get creative, this can be fairly healthy. Chicken, lean ground beef, various types of veggies, etc.

Protein pudding. (Casein/blend powder, heavy cream or peanut butter, hot water.)

Veggie platter (good call HitMeUp).

Fruit platter/bowl (cut up grapefruit, pineapple, orange, apple, strawberries, etc., maybe some Splenda on the side, or some Walden Farms dip (http://www.waldenfarms.com/cfdips.htm)).

And pizza.

I quite often serve hummus, bruschetta, shrimp rings, and/or mixed spiced nuts. I used to make stuffed mushrooms quite often, or prepare chicken dumplings. You can also make spring rolls, raw (http://thaifood.about.com/od/thairecipesstepbystep/ss/thaifreshrolls.htm), or oven fried (http://www.razzledazzlerecipes.com/chinese-recipes/oven-fried-spring-rolls.htm).

I like guava's spiced nuts idea.

Here's some cashews I made recently:

2 cups cashews
1 egg white
1 tbs water
1 tsp salt (if unsalted nuts)
1/4 tsp cumin
1/4 tsp pepper
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/4 tsp cayanne
4 packets splenda

Mix everything but the nuts together in a bowl. Add nuts and coat.

Spread on a baking sheet (I cover with foil sprayed with cooking spray to ease cleanup). Bake @ 275 for 25-30 minutes.

I actually like to use 1/2 tsp on all the spices but the cayanne to give them more flavor, but that's the recipe as I original got it.
