This is the best salmon recipe I've ever found, and even better, it's one of the healthiest.

Baked Salmon (makes 2 servings)
2 Fresh salmon fillets (6 oz each)
1 tbsp olive oil
2 garlic cloves (minced)
1 tsp dried basil
1 tsp salt
1 tsp black pepper
2-3 tbsp lemon juice
1 tbsp parsley

Mix all ingredients (except salmon) in a small bowl. Place salmon in a medium dish and cover with marinade just mixed. Put dish in refrigerator for at least one hour.

Preheat oven to 375 degrees.

Remove salmon from dish and wrap and seal in aluminum foil (separately), adding any marinade left from the dish. Place wrapped salmon in a glass dish and bake for 35 to 45 minutes.

I like to serve the fillets topped with some fat free sour cream, but they are incredibly juicy and delicious without it.

This one should work with trout too, right? :) Sounds good

I didn't like fish much a few years ago, but I'm starting to like it more and more as I'm getting older :)

i just wanted to bump this, because whenever i eat salmon i try to do this recipe, it tastes amazing!

A couple of variations...
You could pan-sear it and then bake it at about 350 rather than 375, or you could broil it once its done for 3-5 min. so you could have a nice crispy golden brown grill like outer texture.

Also, you could melt some brie on top :)
