The Tenderloin is a small portion, for lack of a better description, "under" the Breast. The main part of the breast is removed, and then the smaller section, underneath, is the "Tenderloin".

Higher fat, still an okay protein source. Much higher in the B-vitamins. Braising the chicken thighs would help reduce the fat content.

My suggestion is if your parents own an asian restaurant, ask them to order you a case of boneless, skinless, random chicken breasts. Very inexpensive, about $1.15 - $1.25 a pound. They're not sized but if you have a scale you can precook 10 pounds at a time and portion them out as needed. I'm a sales manager for a food distribution company and we sell to a lot of asian restaurants and this is the way I do it.
