View Full Version : Vegetable Quiche Cups

I got this recipe from bodybuilding.com. I just tried them today and they are very yummy. I actually used "Veggie Shreds" for the cheese to keep the fat down a bit lower. I also used all 12 cups of the muffin pan instead of just 9.


Vegetable Quiche Cups

1 package (10 oz.) frozen chopped spinach
3/4 c. egg beaters (any flavor)
3/4 c. shredded reduced fat cheese
1/4 c. diced green bell peppers
1/4 c. diced onions

Microwave the spinach for 2 1/2 minutes on high. Drain the excess liquid. Line a 12-cup muffin pan with foil baking cups and spray the cups with cooking spray. (the original author used 9 of the cups rather than all 12)

Combine all the ingredients in a bowl and mix well.

Divide evenly among the cups.

Bake at 350 degrees farenheit for 20 minutes or until a knife inserted in center comes out clean.

Per 2 quiches:
Calories: 77
Fat: 3 g.
Carbs: 3 g.
Protein: 9 g.

That would be with no crust, correct?

Why does quiche generally require a crust, anyway? :confused:

I can't recall ever having had quiche before this. I'm sure I may have, but I just don't remember. My point is that I have nothing to compare it to and don't know anything about crust or no crust with quiches....
