eat leftovers from lunch as a snack? For example if I have a chicken breast, brown rice, and some vegies for lunch, then have some chicken breast and vegies only for my snack. (I also do this for dinner and after dinner snack)

I really don't like to snack on nuts or cottage or any of the the typical protein snack foods. I prefer a real meal.

Am I some how messing up my results by going this route?

It's not just okay, it's ideal.

Six approximately equal-sized meals per day is usually preferable to three meals and three snacks.

What Guava said.... don't think in terms of snacks.... you shouldn't be 'snacking'. Have full, equal meals.
