1. Why are unsalted/raw almonds better than roasted/salted almonds? Or any w/ salt food for that matter?
2. Among Oils, why is olive oil the best? How about canola oil?
3. For convenience I prefer to eat frozen veggies, does the process of freezing decrease nutritional value?

Generally, NO. Veggies are "Flash" frozen. This is usually done at a SUPER cold temp (like -140 or so) for a matter of seconds. The process happens so quickly that ice crystals cannot form inside the food which would end up damaging cell walls. This is why if you freeze a veggie at home it is mushy when defrosted.
Pretty much any frozen veggie is just as good as when it was fresh.

Your body needs to maintain a certain level of saltiness in your blood. If you eat a lot of salt, it will all be absorbed into your blood stream and your blood will get too salty. They only way to fix the problem is for the kidneys to stop taking extra water out of the blood. That means your blood volume will increase because you'll have extra water in there.
Bottom line, extra salt means higher blood pressure and water retention.
Salt is necessary part of a healthy diet, but most of us don't need to go looking for it -- it is in almost everything.
You can get rid of salt by saturating your blood stream with water (drinking a lot). Then, you'll urinate the extra water and salt.
Many of us here drink a gallon or more per day. I drink about 1.25 or 1.5 gallons every day. Good for health, and I know I'm not retaining any extra salt.

I'm pretty sure he's not sodium deficient. Unsalted is definitely better, no matter how much water you drink.
