Just to get a general idea. If one was to be able to lift 200LBS ten times and then was able to lift it 12 times, what % of weight increase would that equal to?
How much weight % increase is equal to rep increase? I know there is no exact rule or equation, but a general rule of thumb would be helpful.

There is no % weight increase. What you did was increase volume.
Here's why the two aren't correlated:
Let's say you do squats. And you increase the weight on your squats. Will that allow you to run farther?
Or, let's say you run 4 miles this week instead of 3 like you did last week. Do you think you could squat more?
This example is the same ... running is like a high-repetition workout with your legs.
When you increase reps, you are not necessarily increasing your strength. You are increasing your endurance. You will get some strength gains but they're not as easily quantifiable until you try a heavier weight.
For an approximation, use a 1-rep calculator:

10 reps @ 200 correlates to around 265 pounds of a 1-rep max.
That is only an approximation. Some people will be far stronger, and some will be weaker, because so many factors are involved.
12 reps @ 200 loosely correlates to around 280 pounds of a 1-rep max.
So, in this case, you could say you had a 6% improvement.
However, it's more complicated. Only your 1-rep max actually improved 6%.
Your 10-rep max went from 200 to 217. That's a 9% improvement.
Again, these are just shot in the dark guesses.
The best way is to use a system. I like using the 2-rep rule. Basically, if you hit your target reps, keep going. If you can do 2 reps over your target, increase the weight.
So, 200 x 10 = stay at 200
200 x 11 = stay at 200
200 x 12 = okay, now increase the weight to 205 the next time
You don't want to jump the maximum always, because there is a law of diminishing returns that you don't want to bump into too quickly.
