I am trying to make up some protien bars & post the recipie here.
In order to give an accurate breakdown of the bars, I would like to know which are the good fats & bad fats in nuts etc.
Saturated fats, Mono- saturated, poly whatevers......
You know what I am trying to say ( I hope ! ).
Any help would be good here guys,

Try to keep saturated fats at a minimum. The "good fats" are monounsaturated and polyunsaturated. Monounsaturated is the best kind of fat, as it lowers LDL (bad) cholesterol and raises HDL (good cholesterol), but polyunsaturated fats are very good as well. Omega-3 and omega-6 are polyunsaturated fats, and are very good for you. Here's a link with some more info:
