Get a slow cooker.

Throw in some chicken breast. Throw in a can of chicken broth. Throw in a package of taco seasoning.

cook for 8 hours.

The chicken is moist and juicy and also healthy.

put in some tortillas or hard tacos.

I'm giving this a shot today.

I threw in two cans of chicken broth, a can of water, two chicken breasts, celery, carrots, and a pack of taco seasoning.

Set crock pot on high...

This was very good. We baked up some tortilla strips, added a spoonful of fat-free sour cream, and it was a very tasty tortilla soup.

Forgot to mention I added a small can of green chilis to the mix.

Tried it yesterday. Really easy to make. Started it around noon and came back home close to 8pm with a delicious smelling house...
REALLY good stuff!

Thanks Guys!

This is a really stupid question, but keep into consideration I'm under 25, single, and a male...

Can I use a frozen chicken breast? I'm going to go ahead and assume NO...

Considering it's a crock pot and not an oven (so the temp will be lower) I'm not sure any reason it WOULDN'T work...just might take a bit longer to cook.

I am trying it out today.

I chopped a medium onion and put it on the bottom of the crock pot then added the chicken breast, sprinkled it with some taco seasoning and then added a can of rotell mexican style tomatoes (with green chilis and cilantro) set it on low and look very forward to the aroma in the kitchen when I get home tonight!

I plan to make a green bean salad and serve with spinach tortilla's.

Thanks for the idea folks!
