Heres how I do my baked chicken...

Defrosted chicken breast
1 yukon gold potato
2 large crimini mushrooms
about 20 capers

Place all ingredients in a pyrex dish, and splash with olive oil.
Then add salt, pepper, thyme, oregano, and lemon zest.
Then splash with white wine (about a 1/4 inch thick).

Bake 40 min.

what's up with those yukon gold potatoes? I keep hearing about them, are they nutritious, or just plain tasty...or both?

Honestly I have no clue about nutrition of potato varities...

Heres what I know, I buy whatever is fresh from the farmers market (you prolly know whats up w/ that Dodus...University Mall Parking Lot). I also tend to purchase the smallest potatos possible because they simply keep longer.

Red "B" potatos and Yukon Gold potatos keep in the fridge (yah I know I should keep them in the cupboard but smaller potatos work well in the fridge). They also cook up really well in both the oven and the microwave.

Thats what I look for in a potato...something with a long shelf life, something fresh, and something that cooks up easily.

Word, I used to drag my parents to that thing whenever they came down to celebrate the time-honored ritual of helping me to not die of starvation. I don't think that's unique to Athens, but I could be wrong.

As for things that are, how's the bar scene coming down there? Finding your niche? Ever check out Tony's?

Farmers markets are everywhere, but Athens happens to have a really wonderful one..

I don't know if I'm really finding my niche or anything..I checked out Tonys but its such a dank-place...lowest lights in town, and it seems like the crowd is all like men in their 40s and 50s. I haven't been there since students came back though...

I think the only bar I haven't been to on Court is Courtside, I think its jsut too far down the street and thats why I always end up skipping it...
