See the title of this thread.
Anyone have any ideas or use any recipes on a regular basis that can help me out here? I'm going to a potluck party but I want to bring something I know I can eat. Most of my friends are junk food maniacs, yet they don't add on a millimeter of fat onto their stick-thin bodies!

baked fries
cut potatoes or sweet potatoes into wedges, drizzle a little olive oil and seasonings on top, mix well, bake 45 minutes at 375 degrees
potato chips
slice potatoes as thin as you can
lay on a single layer on a plate covered with paper towel
sprinkle with seasoning
microwave until they turn brown, flipping and turning every 2 minutes
(I think mine took 8 minutes, but your microwave will vary)

This is really the most basic way and easist thing to do, so great post Guava...but if you want chips that are much closer to the real thing...heres what I suggest.
Par-boil (this means to briefly boil, partial-boil) your potatos for about 4 min. (after 5 is just too long)..then let them cool in the fridge.
Once they're cool, the outer area will be cooked and the middle will remain hard. Now you slice them and season them.
Then bake at 350 for about 15-20 min dry (no olive oil).
Pull them out and arrange them on a piece of foil. I suggest making an olive oil wash (2tblspns oil, 1tblspn water and any seasoning you enjoy) then BROIL them until they get very crispy and golden brown.
The point is that the boiling softens them, the baking cooks them, and the broiling crisps them. Just my $0.02
