Personally, I strongly dislike sweet cottage cheese. I tend to just normally put some salt and pepper on it and eat it straight, or more often I dip pretzels in it...so then I came up with this great dip and I just had to share it:
1/2 cup cottage cheese
1 sprig of fresh dill
a few stalks of fresh chives
a pinch or two of dried thyme
kosher salt to taste
1 teaspoon (or just a quick splash) of olive oil
(the calories should be just a bit higher than what our cottage cheese is depending on how much oil you use, although a teaspoon is really very little...mine is about 120kcals)
Use your food processor (or a blender might even work...I have a nice food processor)...and process the herbs first, then add the cottage cheese and emulsify it...add the olive oil last and process for just a few more seconds to make it creamy.
I use this dip for my pretzels and its simply delicious.
The herbs give a really nice light green colour, and I've found that even though I use smallcurd cottage cheese, emulisfying it gives it a really smooth texture.
I hope someday I can go to some pot-luck type parties (or hold my own) and I can bring this and really wow people with it :)!
