I'm really not so crazy about traditionally prepared oatmeal, but with a few extras, it's great.
This is my basic recipe
Amish Oatmeal (6 servings)
1 and 1/2 cups Quaker quick oats
1/2 cup sugar
1/2 cup milk
1/4 cup melted margarine
1 egg
1 teaspoon baking powder
3/4 teaspoon salt
1 teaspoon vanilla
Combine and mix well. Spread evenly in a greased 9 x 13 inch pan.
Bake at 350 F. for 25-30 minutes or until edges get golden brown.

I substituted 1 T oil for the margarine, cut back the sugar to 1/4 C and added 1/4 C of applesauce. I bake this, then store it in the freezer.
Then I also made a batch of
Granola Makes 20 servings
2 bananas, peeled and diced
1 1/4 cups dates, pitted and chopped
1/4 cup packed brown sugar
1/4 cup hot water
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
8 cups quick cooking oats
8 ounces dried mixed fruit
8 ounces blanched slivered almonds
1Preheat oven to 250 degrees F (120 degrees C).
2Puree the bananas and dates in a food processor. Add the brown sugar, hot water, vanilla and cinnamon; mix well.
3Pour mixture into a large mixing bowl, add oatmeal and mix well.
4Spread onto large baking sheets and bake at 250 degrees F (120 degrees C) for 1 to 1 1/2 hours stirring frequently. Cook longer for crunchier if desired. Once cooled add the dried fruits and nuts, and mix.

But I leave out the dried fruit and nuts. I store this in ther freezer as well, but it might keep just fine in an airtight container.
:eat: So, what I do for breakfast is this:
Slice an apple into chunks and place into a bowl. Microwave on medium high heat about 1 minute or until soft. (If you use high heat, sometimes the edges dry out). Then I put about 1/3 C each of granola and Amish oatmeal. Microwave again until warm. To top it off, I use John's milk shaker trick. I put milk in a glass jar (I add a bit of sugar and vanilla to mine), shake it like crazy, then pour the bubbly mess on to my breakfast.
I've been eating this every morning for the last week or so, and I'm not even close to getting tired of it.
