For those low carb / good fat days....this one is super easy:

5 egg whites
chopped onion
broccoli (a few florets)
thin sliced peppers (red, green , yellow)
Jalopeno if you want to zing it up
1/4 tsp of oregnao and basil
mushrooms chopped
2 tsp olive oil
1/4 canned salmon

1. drain salmon and mix well (usually there are soft bones in there) and set aside 1/4 cup.

2. warm olive oil and throw in veggies and cook till soft
3. beat egg whites and mix with spices
4. set heat to medium-low to low
5. pour egg mixture over veggies
6. spoon salmon on top of egg mix
7. cover and let it set for approx 10-15 min.

I'll bet you could do this in the oven too...just bake it in the same pan (with foil over the handle) at 350 for about 10-15 min....then if you wanna be really fancy put it under the broiler for a min. or two until the top gets golden brown!!! Also, you could add chives, lemon zest (from the rind, use a grater or microfile and don't include the white part underneath the rind cuz that part is yucky..just the little yellow part from the very surface), and I think a bit of milk would help as well!!
