In a word (or two): HOLY COW! :tu:

We bought a food processor this summer and this morning I finally got around to making my own nut butter for the first time. I made it from a couple of cups of almonds with a pinch of salt and about 1T of flaxseed oil. Buying the nuts in bulk, my total cost was about $4.25. For the quantity it's probably comparable to buying natty in the store.

It tastes great! I'm never going back to store bought!. :drool:

We use a grinder at the local store to make almond butter and I agree!

Holy cow is right....made almond butter the other day (3 cups of almonds....dry roasted).

Here's a tip:

Oven roast at about 400 - 450 for ~ 10 minutes stirring in between and paying close attention to the nuts so they don't burn.

their oils are released at that point and the taste is intensified :tucool:

Then run then through the food processor until you hit your desired smoothness. You don't need to add oil when they've been roasted.

Amazing taste!

Gordo is right--toast those bad boys. You'll know when to take them out...scratch that, you will not be able to stop yourself from taking them out at the correct time, because they will smell irresistable. The only nuts to watch are macademia--some will burn and some won't. Just toss the blackened ones.
