I just bought some buffalo (ground) and I'm not quite sure what to do with it...I have some ideas, but I was wondering if others had cooked with it before...

Use it just like you would ground beef or turkey. I've found that it tastes a little richer but, because it's so lean I personally want to season the hell out of it. I prefer it as a burger.

I kinda made a stew out of it with the first 1/4lb patty I had. I broke up the patty, and made a base out of lamb stock and hoisin sauce. Then I added some celery and carrots and added a little soy sauce for flavour.
On the side I sauted some onions, garlic, sweet pepper and tomatos and then deglazed with red wine.

We'll see what I come up with for the next couple patties!!(I got 4 1/4lbers)
