View Full Version : Protein Preperation & Storage

Hi,

Had a look around the forum but didnt find my answer so thought I would ask.

I make my shakes (with water (morning) or orange/cranburry juice (PWO Shake)) usually the night before as I make and store in the Fridge, as usually do not have time in the mornings and go straight to the gym from the office. So I will make my morning and PWO Shake before hand. I use a blender as well to make, another reason I dont usually use in the morning (Being Quiet) as the family is still asleep when I leave. I will usually take my PWO shake withme in the morning and it will be in my bag for about 8 hours before I actally consume.

My question is, is it OK to make and store in the fridge, as some friends have said once prepared it should be consumed within 20 miniutes.

What about having a shake outside the fridge once prepared for long periods such as my PWO Shake.

a post the other day about something similar was said that heat denaturizes the protein, and leaving in the fridge for < 24 hours is ok. Now taking it out, and leaving it for 8 huors, I dont know about that.

Thanks was what I was thinking. I assumed Protein would be OK but now the more I think about it the more I wonder.

I was thinking if freezing would make a difference. At least it would take a number of hours to de-freeze but again not sure if Freezing is OK.

I don't think heat denatures the protein, not at least right away. From what I understand, heat can start the chemical reaction of breaking down the protein into amino acids, but given too prolonged an exposure, probably hurts it in the long run. I've read so many articles that say a scoop of whey in oatmeal is a fine meal. And some whey supplement companies even include baking recipes, so I can't imagine whey is that unstable.

I wouldn't personally make a post-workout shake with juice. Try gatorade or dextrose. If you are using a mixer for your shakes, get a shaker instead. They're quiet, and you can bring it along with you.

I have considered that. Personally I like to mix it as with a shaker I occasionally get lumps which is nasty. Nearly makes me puke.

I mix with a juice as it is unflavored whey and isnt the best tasting. Rather have it with juice, for 2 reasons the sugars (fructose) from the juice helps or acts similar to glucose (I assumed) and the most important is it helps hide the taste a little making it easier to consume.

However I do manage to consume it in the morning with water with alot of tolerence. I knock it back holding on to my nose and have a glass of water ready.:)

At night I take Casein which is chocolate flavored anyways, so it is by far the best shake of the day.

All protein becomes denatured when heated. That is not necessarily a bad thing. It simply means its conformation has changed. If I heat gelatin in a saucepan, it will turn to liquid. The chemical composition of gelatin is still there, and its protein is still there, what little it has. Only its form has changed, from solid to liquid.

It is when you super-heat a protein is when you have problems. That's when the chemical composition changes. If you put a steak in a 1000 degree oven for 3 hours, you will have charcoal. All of its amino acids will be destroyed. Same with the gelatin in the above example, if I left it on high for an hour. The liquid would become vaporized and you might have a sticky goo left on the bottom of the pan, but its nutrients would be destroyed.

That is why I eat my meat raw. I just cut the horns off, wipe its ass, and throw it on a plate...

You are good to go, bro...I am not sure how fragile the whey/liquid mix is, but staying in a cool (or even warm) bag for several hours, you should be fine. No worries there.
