Here's my most enjoyable recent meal:

First, mix together the following:

Juice from 1 fresh lemon
4 tsp garam masala
1 tsp crushed chilli
1 tsp black pepper
1 tsp onion powder
0.2 oz ground almonds

Stir the mixture up - it will make a thick, grainy paste. Stir it into a bowl of grilled chicken breast, sliced button mushrooms, rice and lentils, and serve hot.

You won't be sorry.

I think you could do something similar with tofu. Also, what exactly is garam marsala..I know I've had it, but I can't quite place the term...

It's a hot spice mixture used in Indian cooking, and is very distinctive and delicious. In Britain it's sold as a ready-made powder. If it's not available in your local shops, there are many recipes on the Net giving the ratio of various ingredients.

sounds good, but when you say serve hot, do you mean mix in the cooked chicked with the paste and just serve? Or does the dish need to be warned up again? Thanks!
