Here is another of my favorites. I make these as a casserole, to cut down the calories from the tortillas.

Per Serving (one fifth of total recipe):

Basically, cut chicken into small strips, cook in pan on rangetop. Season with a packet of fajita seasoning. Meanwhile, chop all your veggies into small strips as well, cook them in a wok until the onions are translucent, and the peppers are soft, almost like noodles. Spray a 9x13 glass casserole dish w/ olive oil cooking spray. Place two tortillas in the bottom of the dish, scoop in chicken, scoop in peppers. Place two more torillas on top of this, pour a jar of salsa on top, and sprinkle the cheese on top of this. put into oven @ 375 for about 10 - 15 minutes, until cheese is melted (everything else is hot, it just came off the stove after all!).
I like to drown this in hot sauce, and eat it will a serving (or two) of lowfat sour cream.
