I made this this weekend, I had a sweet potatoe and some roast go get rid of before it went bad :-), turned out pretty darn tasty, and the macros are right on.

In a large soup pot, I just randomly threw in some frozen veggies that I had, cut up an average sized sweet potatoe into .5 inch cubes. Did the same for 1.5 lbs of roast beef. Seasoned it with 2 tsp basil, some salt and pepper. Poured in the beef broth, cooked it all on low heat for about 8 hours.
I ate it tonite for dinner, will be eating the rest each night this week. I measured it by ladeling it into 5 plastic containers (two scoops each in turn). I hope someone else enjoys this!
