View Full Version : Salmon Steaks - How to cook?

Well I usually eat Salmon from a can, but these came with an order of burgers & steaks.

I've never cooked any type of fish before. So my questions are: How do I cook these? Seasonings to use? How do I know when they are done?

Yahoooooooo!!! Salmon on the grill!!

Coat with olive oil. Pepper on both sides (other common spices are also excellent - but start wtih the pepper). Grill for 5-6 minutes per side (depending on the heat). If it's a little pink in the middle, then it's good to go.

Do the exact same thing with asparagas and it's a no-dish dinner.

If you don't have a grill, you can broil, but salmon is pretty oily, so it tends to create a lot of smoke.

Buy a grill.

oil your grill
apply 1 teaspoon of lemon-pepper seasoning per side
grill approx 7 min per side until the fish is flaky


Other popular toppings:

teryaki marinades (find low sodium)
honey-dill / honey-mustard brushed on in the last minutes of grilling
simply grill as is (it's pretty good by itself).

dill
lemon slices
pepper
paprika
ginger
onion
orange slices

The possiblities are endless with salmon

The best way to cook salmon is, believe it or not, in the microwave.
Put your seasoning on, cover the steaks and then microwave for a minute or two. It doesn't take very long at all.

The salmon will come out very tender and juicy and it's just amazing.
I always thought microwaves were useless.

I like mine in the George Foreman Grill with some lemon pepper. Omega-3 goodness in only 5 minutes

As a professional cook, I beg of you not to do that! Microwaves are meant to reheat things. They're not designed to safely and evenly cook, especially not meats or anything else that is at a higher risk for carrying pathogens that can make you sick.

As for the salmon, grilling is great. Keep your seasoning fairly simple (citrus and herb suggestions are good) as the flavour of the fish is delicate and you don't want to overpower it. Heat up your grill very well (med-high or so) and spray it with cooking spray (or oil it some other way, if that's available) before putting the fish on it (it's just like with chicken or anything else, for that matter. It will stick and tear if started on a grill that is less than searing hot).

Simply cook each side until the flesh cooks towards the middle and the fish juuuust flakes. It's very easy to overcook fish, so as soon as it flakes is when it's done, not several minutes afterwards when it's all dry and unpalatable.

Slightly OT - but I bought a can of this stuff to try and stomach. I've had grilled Salmon before and liked it - do you just eat it straight out of the can like tuna?

I'm eager to try it - but thought I'd ask in case it needs any kind of setup. :D

OMG... salmon from the can is SO gross... it's got bits of skin mixed in, and even bits of bone... they must process it with something to make the bone soft, but you can see bits of the main spine in there... at least that's the way it is in the brand I bought (I think it was Bumble Bee pink salmon, 8oz can).

Anyway, there was a recipe on the back of the can which wasn't bad. Add about a half cup each of whole wheat bread crumbs, green or red bell peppers, and onions, plus two egg whites, and mix it up in the food processor. Make into patties and fry with non-stick cooking spray. I usually get three burger sized salmon cakes from this recipe. But I make sure to pick out all the bones and skin before I make it...

Jeez.. thats encouraging . . . :d_frown:

I guess I'll just have to dive into it and see - worst case scenario I'll toss it out if it's too gross.

I eat it straight from the can...the little salmon steaks in the pouches are much better though, so I get those when they are available (I don't see them at all of the grocery stores I visit).

I grilled the salmon last night, I added a little olive oil and lemon pepper seasoning to each steak. It was great! Much better than the can, or pouch, not near as "fishy" tasting.

Try pan-searing too!!

Just use a small bit of oil and sear both sides on the stove for about 2 min. then put it in a 350degree oven for about 10 min. PERFECT. I love pan searing lots of meats but salmon is the best for it! Comes out great everytime and I just use put my pan in the oven so its just one thing to clean!!

Standard nonstick pans. Depending on what brand you use, I suggest covering the handle in tin foil. Chances are the pan itself will be able to withstand 350 degrees, but on some pans the handle can't, and tinfoil will correct that problem.
