So I'm on my own with dinner for the next couple nights. I was wondering if anybody had any tasty, simple, and nutritious recipes for me? :D For the first night, I am doing cardio shortly before eating, so I'm not sure if this should be taken into account in my menu selection. The other night I'm lifting, and was leaning towards an omelette (because it's one of the few thigns I can make :o ).

Any suggestions for my cardio night, or omelette ingredients/tips, would be much appreciated! :tucool:

Veggie omelettes are nice.

Red/Green bell peppers
chopped red onion
chives or green onion
mushrooms
peppers
1Tblsp ultra-low fat creamcheese

Or a spicy omelette is good:

Most of the same ingredients but add

diced Jalapeno peppers (a couple of seeds for heat)
tabasco sauce (a couple of shakes)
a tblspoon of salsa
1tblsp ultra-low fat creamcheese.

If you want to bring the pain....a dash or 2 of chili powder and a teaspoon of dried chilipepper flakes

=====================================

Other easy things to make are french toast using 100% whole wheat bread slices (who says it has to be for breakfast?). Mix peanutbutter and some lightsyrup together for topping.

Most times I skip syrup altogether and top with a fruit bottom yogurt.

===================================
You can make tuna burgers:

1 can of tuna.
1 egg for binding
add a dash or 2 of worscester sauce
pepper
garlic

makes 2 patties
fry lightly in oliveoil

away you go.
=================================

broiled chicken breast is pretty easy too if you have a broiler pan

==================================

Make your own protein smoothie dinner using protein powder, oats,PB, some berries and a couple of ice cubes. There's literally tons of recipes out there.

=================================

it takes 11min to boil some 100% whole wheat rotini noodles (el dente)
3 mins to microwave a cup of peas
and about 8 or so min to nuke 2 chicken breasts

not long and certainly not hard to do at all. Though you may want to skip the carbs after cardio.

Wow Gordo, thanks a lot! All of those sound great! :drool: Even if I don't use those this week, I certainly will in the future.

Any suggestions on a lean meat to put in an omelette? I'm at a loss for some reason.

Easy, you can now get fat-free ham (try to watch the sodium though)....but my pref is cdn back bacon. Pound for pound more protein.

The beauty of omelettes are you can pretty much add whatever you want. There's no hard fast rule.

a spinach (cook it till wilty first) / ultra-low fat cream cheese omelette is suprisingly tasty.
