I was poking around the Internet last night and came across a recipe from our own Jeremy Likness which seemed so simple I'm wondering why I didn't think of it first. I played around with what I had in the house (it was midnight) and ended up with what would pass for a fairly healthy chocolate "cake." I call it a "cake" because while Jeremy called his recipe "brownies," I wouldn't put mine in the brownie category, as they weren't as "dense" or as "rich" as what I would associate with a brownie. I didn't put any "icing" on mine, but I am sure you could top these with something... peanut butter or something would be good.

So here's the "recipe"... again, its so simple I hesitate to call it a recipe.

One serving of chocolate protein powder
(I used a single serve packet of EAS Myoplex Deluxe)
One egg
One cup lowfat (1%) chocolate milk

Mix everything up in a shaker cup (you could use a blender).
Pour into a microwavable bowl (mine was 4 x 6 x 2... make sure it is deep enough to allow the "cake" to rise to twice its height).
Microwave seven minutes, let cool to room temperature.

I'm calling this two "servings". Nutrition information per serving:

Calories: 300
Protein: 32g (42%)
Carbs: 30g (40%)
Fat: 6g (18%)

Funny, a friend of mine years ago used to make this same thing...I laughed at him then.....now, I will conquer the "cake."

You could easily add in some chocolate extract and/or 1 - 2 Tblsp of cocoa (unsweetened) to add some more chocolate flavour and get some nice nutrient benefits from the cocoa:
all for an additional 12 - 24 cal with
7- 14 Cal coming from fat of that .4 - .8 is sat.
An extra 1g of protein +
2.9 - 5.8 g of Carbs high in fiber and minerals... win, win.

I throw some cocoa into the mix when I make my chocolate protein bars....darn good stuff.

(only "real" cocoa here....not the instant pkg with sugar and other junk added)
