Ingredients:
1/2 Cup Mashed Sweet Potatoes (Cooled)
1 Egg white (Lightly Beaten)
3/4 Cup Skim Milk
3/4 Cup Whole Wheat Flour
1/2 Tsp Baking Powder
Directions:
1. In a medium bowl, combine sweet potatoes, egg white and milk. Beat until blended. Add the flour and the baking powder. Stir until smooth
2. Lightly coat a pan or griddle with Pam and heat stovetop to medium
3. Pour mix and cook until top of pancake is covered with tiny bubbles and bottom is golden brown. Turn and cook other side.
Nutritional Facts (Using Lactaid Fat Free Milk):
Total Calories: 439
Makes 4 pancakes

Carb: 91 (77 Net)
Fiber: 14

I personally had to use semi-skim milk and WholeMeal flour and it was fantastic. :tu:
If someone could kindly tell me how much 3/4 Cup of whole wheat flour is in grams, I'd be greatful. Thanks. :)
