I discovered Okonomiyaki recently and it's already solidified a place in my daily diet. Okonomiyaki is a pancake-like dish made with cabbage, flour and eggs (I use whole wheat flour and egg whites). During the cooking process, you can top the pancake with any ingredients you like and then flip the pancake over to cook them. The freedom of toppings afforded by this cooking method is why Okonomiyaki is often referred to as "Japanese Pizza."
There are a number of different ways to prepare Okonomiyaki, such as Osaka style, Kensai style. Hiroshima style, etc. Kensai style, which I linked above, is the easiest to prepare and most suited for clean eating, in my opinion.
