I can only say this rocks because I cooked it on a spur last night (I prep all my meals Sunday night).

Contents:

-> 2 LBS ground chicken (go for purdue extra low fat ground chicken from breast meat)
-> 6 OZ tomato paste
-> 1/2 cup milk
-> 3/4 cup favorite veggie relish (or substitute chopped veggies of really, any kind [which I'll try next week])
-> Optional: Garlic

Mix in bowl. Throw into a glass or steel pan (that's been coated, of course). Shape into a nice log probably 1" high, 6" wide, and 10" long. Any higher and it won't cook thoroughly. Any wider and it'll burn.

Cook: 350' oven for 60 minutes.

WARNING! This will appear RED because of the tomato sauce. Use your proper chicken cooking techniques, and double check your tenderness. It should be VERY moist when it comes out.

The lovely part is that I finish it off when I portion it out and put it into containers for the week and then when I nuke it in the micro it finishes off any exces moisture.

It's truly the best damned chicken loaf I've ever made.

SUBSTITUTE Turkey for TURKEY LOAF!

NUTRITIONAL INFORMATION:

6 oz [slice size] Ground Chicken = 396 cals, 24g fat, 48g protein, 0g carbs.

Then just add tomato sauce, and the other stuff above.

Sounds yummy. My chicken loaf looks like this:

Ranch Chicken Loaf
2 eggs, beaten
3/4 cup ranch-flavored tortilla chip crumbs
3 Tbsp. salsa
2 Tbsp. ranch-flavored salad dressing
1 tsp. chili powder
1/2 tsp. cumin
1 lb. ground chicken

PREPARATION:

Preheat the oven to 350 degrees F. In a large bowl, mix together the eggs, tortilla chip crumbs, salsa, salad dressing, chili powder, and cumin. Add chicken and mix gently but thoroughly. Shape into loaf on slotted baking pan or broiler pan.
Bake at 350 degrees F for 1 hour, until internal temperature registers 175 degrees F. Slice and serve with more salsa.

Of course, I use fat free ranch dressing, and a mixture of TVP, cornmeal and ground flax seed instead of crushed tortilla chips. I had this last night shaped into burgers and cooked on the barbecue. When I make it as a loaf, I increase the ranch dressing a bit, but as burgers, that would make it too wet.

This really does sound good. I'll have to try the spiced up chicken loaf
