View Full Version : Pork Fried Rice!

Ok, so not as good as the chinese restaurants, but good nonetheless!

Grill up some pork chops or a pork loin or any other cut of pork you can get and trim it up nicely (i.e. trim the fat!). Grill it up (marinate it first if you want). Once it rests for a little bit... cut it up into small little pieces.

Take 1 green pepper, 1 red pepper, and 1 small onion. Dice them up real small.

Take 1 microwavable bag of brown rice and empty it into the bowl that is holding all your cut up veggies and pork.

Get a pan on the stove, get it nice and hot. Hit it with some cooking spray and drop the chopped up goodness into the pan. Cook over low heat until the veggies are translucent and the rice is not hard.

That is almost exactly what I do several times a week. (although I use chicken.) I like to heat my rice,chicken and veggies in the microwave for a bit while cooking up some egg beaters. I throw the rest of the stuff in there and sprinkle onion powder, ginger and a generous amount of lite soy sauce. I'll have to try with pork, never thought of that for some reason :tu:

I do my fried rices in a wok, stay true to my roots :)

Very hot wok with a splash of vegetable oil and olive oil (olive oil by itself smokes like crazy)
Throw in the meat (chicken, pork, beef, turkey, it doesn't really matter)
Once meat is almost cooked, add vegetables (peppers, beansprouts, sweetcorn, onion, garlic, bok choi, etc) Once vegetables begin to be cooked, splash in oyster sauce and soy sauce.
Remove rice from rice cooker (one of the great joys and time savers of my kitchen), add to the wok, mix it well, add some chilli powder and sesame seeds. Move the mixture to one side of the wok, add egg on clear side. Scramble it, and when semi soft, mix it well with the rice. Add sesame oil for taste and serve.

Sounds like it takes a long time, only takes 10 minutes or so. Delicious.

Sprinkle about 1/2 to 1 teaspoon of Splenda in there with the rice while stir-frying, and you will get something a LOT closer to the Chinese restaurant flavor. My father worked as a cook in several Chinese restaurants, and I've worked in the kitchens and out front myself--the cooks always add sugar to the fried rice.
