View Full Version : Salmon in a Pouch

Here is an easy and quick way to make a delicious salmon dish in just a few minutes, especially if you've got the carrots and peppers already julienned (sp?).

8 oz piece of salmon
1/3c julienned carrot
1/3c julienned red pepper
1/2 orange, segmented, little or no pith
kosher salt
fresh cracked pepper
ground coriander
(optional: Dry Vermouth)

Take a large piece of parchment paper (say 30" off of a 15" roll. Fold it in half, so you've got a 15x15 "book".

Open it up and place the carrots and peppers to one side of the fold. Sprinkle with salt, pepper, and coriander. Place salmon on top, season again with the same 3 ingredients. Place the orange segments on top and around salmon.

(Optional) Sprinkle with several drops of vermouth. This gives the oranges especially a nice flavor.

Fold the parchment over, and crimp it around the edges to where it doesn't open when you let go.

Place packet on a plate and microwave on high for 4-5 minutes, or until the fish reaches 131 degrees.

Open the packet and eat (right out of it!)

Wow, I was right. I made this for lunch today, and it was the best salmon I've ever made. I'm just kicking myself because I forgot the vermouth! Next week. :nod:
