Hey all,
I just read the latest copy of US News and World Report, and in the Health and Medicine section it had a tremendous story about food in America. It talks about the ways that food is produced, marketed, and sold. It is a great read if you have a chance. It may be a bit dry for some people but I found it fascinating.
Here is an example:
Food to sell. America is truely a horn of plenty. In the early 1980's, food production came to an average of 3,300 calories per day available to every person. Then farm policy changed, and farmers no longer ploughed food under or slaughtered animals to be entitled to subsidies. Today, America produces enough food to allow every man, woman, and child 3,900 calories a day. "That additional food production had to be sold," says Marion Nestle, professor in the Department of Nutrition at New York University and author of Food Politics. "One of the first things that happened is that portion sizes started getting bigger."
