Ok, these aren't TERRIFIC but they are pretty edible if you happen to see the mix on closeout like I did. : I've modified the instructions to leave out the heavy cream, oil, etc..
1 Package Atkins Quick Cuisine Blueberry muffin mix (don't use instructions!)
1/4 C NF Cottage Cheese
1/3 c unsweetened applesauce
1/2 c egg beaters/egg whites
2/3c water (or enough to make it the proper batter consistency, might be more)
Makes 12 muffins : 82.5cal, 9.6 pro, 11 carb, 2gm fiber, negligible fat.
Ingredients on the muffin mix: Wheat gluten, Unbleached wheat flour, low glycemic cornstarch (?!), freeze dried blueberries, leavening, salt, xanthan gum, sucralose.
Not perfect but not too awful. Might try adding some protein powder if I find more closeout packets ($2 each).
