My mom says I would have to cook it in oil and butter to get the nice taste I want, there has to be a healtier way out there. Anyone know? I want it to taste like chinese chicken.

Never heard of Chinese chicken - so I can't help you there.

Your best bet is to look around for chicken recipes and find some flavorings that suite your taste. I like the breasts grilled with some lemon and pepper or boiled in some non-fat chicken stock... or sprinkled with some lowery seasoning.... you just have to try a bunch - I've probably gone through 70-80 spices and sauces finding the ones I like the most.

Not sure if its close to chinese chicken - but we stir fry sometimes with low-sodium soy sauce and lemon juice and its awesome!

I just use cooking spray instead of the peanut oil in most Chinese recipes...and Splenda instead of sugar. And kiss breaded, deep-fried chicken dishes like Lemon Chicken and General Tso's good bye unless you are willing to have them without the breaded coating.

Check the Healthy stir fry thread here for some recipes:

The flavors in Chinese cooking are due more to marination and the use of sauces than preparation using oil or butter. I don't think my parents EVER used butter in cooking. Isn't that an icky Western invention...like CHEESE?

;)

Most Chinese recipes aren't that bad for you if you use substitutes for the oil and sugar, cut out the MSG and choose leaner cuts of meat.

Is peanut oil an unhealthy oil? The only oil I really use is olive oil which I know is healthy and great. But some variety would be nice?

chinese chicken is a little vague. when i make stir fry i use soy sauce, pineapple juice, and spices. i dont remember all of the spices off hand but the main ones are fresh grated ginger and a couple garlic cloves. i throw sesame seeds in there too if i have them on hand.
