Say hello to your new best friend, the box grater.
Prep:
- Peel a regular sized sweet potato and grate it using your box grater
- Peel a small onion and grate it as well. You can dice, slice or cut up the onion any way you like for a textural difference, but it cooks fastest if it's grated.
- Finely dice a clove or two of garlic
Cooking:
- Heat a non-stick pan
- Saute the grated onion briefly (It burns easily in grated form, so keep it moving and watch it closely)
- Add the garlic and saute briefly
- Add the grated sweet potato and a cup of water
- Turn heat to high and cook until the sweet potato is tender. You may need to add more water if the mixture starts to stick.
- Stir in 2 tsp of smooth peanut butter and 1 Tbsp of yogurt. Cook briefly on high heat until any excess moisture is gone.
- Season with freshly ground black pepper
- Remove from heat and stir in some dried parsley to finish.
This method can also be used with fibrous veggies like zucchini, carrots, squash, parsnip, turnip, etc., etc. It's a nice alternative to the boring old microwaved sweet potato or steamed veggies.
