I don't know your girlfriend so I don't know if my response will apply at all but...Also, you said that you would just be letting her do her own thing and not being pushy. That being said, I've sort of gone through the same thing recently.

My girlfriend recently began working out (had done bikram yoga...wanted to do weights). Of course, I was eager to shower her with as much information as I possibly could just because I think its FASCINATING and you know what it did? Completely turned her off to the whole idea (not forever though, thank god). To those of us who have been working out for awhile, all the meticulous details of weightlifting and anything else comes second nature but for somebody who is just beginning....ITS EXTREMELY CONFUSING.

My recommendation to you in order to set her up for long term success, is to help her with form, basic information like calories burned in a mile run, etc. Stress eliminating obvious junkfoods completely but don't even mention carb/protein/fat ratios or balancing muscle groups or splits or HIIT or anything like that.

Help her begin to enjoy it. Trick her into thinking its extremely easy and by the time she's ready for the confusing stuff, it will have become easy for her.

One way that I helped my girlfriend get started was to make it very simple. Body-for-LIFE's portion rule helped a lot here. It made it very easy for her to pick a "portion" of protein and carbs for each meal, and a good vegetable for one of those meals. I was afraid of turning her off on nutrition and fitness too, but this made things very easy.
