Is pan seared chicken cooken in olive oil healthy?

Is "pan seared" the same thing as like, stir frying, but without the small pieces and constant stirring?

To answer your question, if its what I think it is, I would imagine it would be pretty healthy? but I don't know for sure.

Some oils become unhealthy after being heated up, but I don't think Olive Oil is one of those.

Someone better educated then me hop in please.

Olive oil is pretty susceptible to being converted to trans fat when heated at high temps. Use a non stick pan and a very small amount of oil or spray and you'll be fine.

Do you have a list of which oils are OK to heat and which are not?
I use sesame oil sometimes when stir frying. . .Would prefer to not be killing myself.

I think that's just rumor. Here's an article that discusses it. Among other things, trans fats (or partially hydrogenated fats) require hydrogen for creation. Take this article for what it's worth, it could be total bunk, but it sounds logical...
