View Full Version : be careful if you try to make "hot chocolate" with whey!
SCHTEEVIE Fri, February 13th, 2004, 09:29 PM my furnace has been out all day - and I've been freezing my butt off waiting for the repair guy...
So i think to myself - why not use boiling water with my shake and make it into hot chocolate? (I use unflavored whey isolate and add a spoon of cocoa and sugar)
anyway - as soon as I poured the boiling water in, it occured to me that I was probably going to coagulate the protein...
sure enough - no matter how hard I shook it, I had "chocolate scrambled eggs" :p
...couldn't drink it. :(
still wanted hot chocolate... so this time I used half a cup cold milk, shook it, then added a cup boiling water - worked better that time...

trust me - I treid to eat it - I didn't want to waste it...

FourMat Fri, February 13th, 2004, 11:58 PM When my wife was big into Atkins a few years back, she tried to make soy "bread" from some soy protien powder. When we tried to eat it, the stuff was so rubbery, that it squeaked on our teeth when we tried to eat it. Heat and pure protien are not friends.:p

I've wondered the same thing about the protein being denatured. But I haven't gotten an answer. But I figure we cook meat so.... :confused: I had the same experience with the hot chocolate scrambled protein, except I like to mix mine with coffee it is so good. I just use half coffee/ half water or cool down the coffee with some ice cubes first.
Side note- lots of people eat protein pancakes which are fried so I guess its ok!
F1Champ Sat, February 14th, 2004, 09:22 AM it's still good, when the protein is heated, its structure changes and form itself together with other protein. It becomes a noodle or pasta like structure under microscrope. It's why you see this rubbery stuff. It's basically the protein crystalizes itself.

For the first 5 or 6 bites I thought that I could just eat it despite the consistency, but quickly decided that wasn't going to work. From now on I will just eat oatmeal and drink the whey!

I just mix it in after its cooked. I use the vanilla and it actually is a nice compliment to it. I tried John's Idea of shaking the hell out of some milk and that worked great. I just poured a little cold milk in an old water bottle and shook it (like a polaroid picture...hey yah... :whistle: ) anyway, you don't have to use alot and it gives it a nice creamy texture.
