In poring over my food logs for the past few weeks I see that while I'm finally starting to get my macronutrient percentages about right, I'm still lacking in enough fiber. Calories too, but that's just cause I need to eat more!!
So how do you make sure you get enough fiber?

I slam down a bowl of 100% bran every night as my last meal...
it was tough at first - it can be like wet sawdust...
But now I am used to it and it is part of my normal routine.
the stuff sure acts a "bulldozer" through out the night
- so in the morning I'm always regular :p :o

In Norway we have some fiber crackers (Sætre Fiberrik) that taste really good. I eat them with cottage cheese and ham all the time. They're 37% fiber, so you'll fill your daily requirements in no time....

I take Metamucil which is handy if I dont get my daily fiber requirements. I'm always trying to eat more vegies though to get it from natural foods.
