7:00AM ( Breakfast ) Kashi brand (Corn flakes) w/ 1% milk & a whole apple
11:00 AM : 2 tbsp natural peanut butter
2:00PM ( Lunch ) A turkey sandwich on whole wheat bread
4:00PM Tuna and veggies/fruit
7:00PM ( Dinner) Chicken breast w/ a small salad (cucumbers,tomatoes etc)
10:00PM cottage cheese

Oats are good because they have a bit 'o protein, and are not processed heavily. My understanding is that this translates to a slower transition of the carbs to glucose.
I used to make them w/ skim milk, but I switched to water to cut out some sugar. I like them fine that way now w/ some cinnamon.
You could also consider egg beaters (scrambled) and vegetarian breakfast sausage links (boca makes some that are tasty). You COULD use some syrup on this (sugar free if you will).

You just need to make sure you eat about every 2.5 - 3 hours, and that you get enough calories per day. Also, whatever macronutrient ratios you plan to eat should be reflected in the meals you eat.
I eat 3 lunches at work now, I pack three seperate/complete meals of about 300-400 cals, and eat one every 3 hours.
Whatever works for you is best, make sure you get enough calories is my best suggestion.
I plateaued for a couple weeks, but when I went on a business trip, let's just say I ate very well for a week. I ate "clean", what I call whole foods, shrimp, swordfish, steak, chicken breast, for snacks I had cashews and almonds :-). I kept working out at the hotel each day, and I neither lost nor gained anything. Now on my return, my progress has picked right back up. Dropped like 5 pounds last week doing the same thing I had for 3 weeks with no results. Not sure I know what to make of it just yet :-).
