I baked a pizza tonight, which I topped with all the usual ingredients (tomato sauce, veggies, herbs, etc.), but I used 1% cottage cheese instead of mozzarella. The baking process dried up a lot of the excess moisture in the cottage cheese, resulting in a nice texture, similar to goat's cheese when baked. Give it a shot the next time you bake a pizza! :)

Ever try whipping it up with some granular splenda, cinnamon and vanilla extract?
Makes a very nice healthy whipped cream alternative :drool:
notenuff Sun, November 28th, 2004, 04:32 PM I gave up trying with cottage cheese. Now I just blend it with some water and ice and take it down as fast as possible. I tried everything from eating it with honey and almonds to fruits but it just didnt taste right.

I must have read this months ago. Now that I've finally tried it, it is wonderfully addictive. I can barely tell the difference between this and whipped cream.
Another couple of my favorite uses for cottage cheese that's gone through the blender is mixed in with pasta with some basil or a tiny bit of pesto, or, mixed with finely diced onions and peppers and chicken breast as a chicken salad spread. (works good as a mayo substitute in egg salad and other things as well.)

What would the actual amounts of those three items be to get what you're describing? I actually like plain cottage cheese, but c'mon - if I can get it to taste like whipped cream...
And what might those do to the nutritional values? I guess I've never looked at cinnamon or vanilla extract to see.
My curiousity is seriously piqued.
